A pinch of Punch

Seriously, deliriously delicious and easy Strawberry Champagne Punch perfect for high tea as requested by @stylemelbourne‘s tweeps…

Take three punnets of strawberries. Chop half a punnet into quarters and reserve. Put the rest into a blender with 2/3 cup icing sugar, 2 tablespoons of lemon juice (or balsamic vinegar if you are feeling adventurous) and 1/3 cup triple sec. Blend until smooth.

Place this mixture and reserved strawberries into a punchbowl and pour over 1.5 litres of sparkling wine (Brut is good for this). Alternatively on a hot day I like to freeze the strawberry mixture into one big iceblock before pouring the bubbles over. And I pretty much like to make sure I have enough for two batches as this goes down way too easy.

Warning: You may just stick a straw in and drink it all yourself. Or just go to Madame Brussels where they can mix you up a jug of pink punch and force you to have restraint.
